The
Consorzio Aceto Balsamico di Modena (Modena Balsamic Vinegar
Consortium) was founded in 1993 by the leading, longest-established
producers, under the name Consorzio Tutela Aceto Balsamico
di Modena. Its aims were to promote, protect and raise
awareness of the vinegar at the world-wide level.
On
21/01/1994 it submitted an application for Protected
Geographical Indication (PGI) status, still being assessed
by the competent European institutions.
In
1998 the Consortium changed its name to Consorzio Aceto
Balsamico di Modena, while its charter, and thus its
commitment to promoting the product and safeguarding
its quality and market, remained unchanged. With this
aim in mind, it has also adopted Regulations which oblige
all Members to comply with production procedures and
methods intended to guarantee the very best product
quality: thanks to the consortium's seal, in use since
January 1999, consumers can now be sure of purchasing
a Modena Balsamic Vinegar that has been produced and
bottled in the genuine production zone, in compliance
with these strict Regulations.
