Panzanella with vegetables and Balsamic Vinegar of Modena PGI

Balsamico Rezepte: Panzanella mit Gemüse und Aceto Balsamico di Modena g.g.A.

Ingredients for 4 servings

400g stale homemade bread

3 ripe and firm tomatoes

1 red onion

1 celery heart with its leaves

fresh basil

Balsamic Vinegar of Modena PGI

extra virgin olive oil

salt

pepper

Dice the bread, toast it slightly in the oven.

Sprinkle with 3-4 spoons of Balsamic Vinegar of Modena and a bit of water.

Thinly slice the red onion, rinse it with running water and drain it well.

Cut the tomatoes into pieces. Wash and cut the celery into thin slices. Tear the celery leaves into pieces.

Put all the vegetables in a bowl, dress with plenty of oil and a pinch of salt.

Add the basil torn into pieces and the toasted bread.  Mix well using your hands.

Allow to rest for 10 minutes before serving.
