Plum ice-cream with Balsamic Vinegar of Modena
Ingredients for 4 servings
400g red plums
50g Balsamic Vinegar of Modena PGI
lemon balm or mint

cut the plums in half, remove the pit and cut into pieces.
Cut the vanilla pod in half lengthwise and with the tip of the knife remove the seeds inside.
Mix the vanilla seeds with the sugar.
Bring milk to the boil with sugar, vanilla, plums and 100ml of water.
Gently boil for 3-4 minutes. Blend and sieve.
Add the Balsamic Vinegar of Modena and allow to cool.
Pour the mixture in an ice-cream maker and cream.
Serve the plum ice-cream with raspberries and garnish with lemon balm leaves.
