Tigelle with Crescenza cheese and cherries with Balsamic Vinegar of Modena PGI
Ingredients for 12 Tigelle
250g crescenza cheese
500g dark cherries
250ml sour cherry juice
30g Aged Balsamic Vinegar of Modena PGI
1/2 teaspoon of powdered ginger
1 pinch of cinnamon
2-3 black peppercorns

Pit the cherries, put them in a casserole with the sour cherry juice, sugar and spices.
Cook over high heat for 20 minutes.
Remove the cherries and allow the juice to reduce until thick and shiny.
Add the Aged Balsamic Vinegar of Modena.
Put the cherries back in the reduced juice and allow to cool.
Heat up the Tigelle, cut them in half, spread the Crescenza cheese and top with the cherries flavoured with Aged Balsamic Vinegar of Modena.
